• Cafayate (Salta): One of the highest altitude production areas in the world - the vineyard starts at 1,700 meters, and the Molinos area can reach more than 3,000 meters (Colomé's Altura Máxima vineyard is about 3,111 meters, general knowledge).
  • The low latitude (26 degrees south) is offset by the high altitude: the sunshine is extremely strong → the peel is thick and the color is dark; the night temperature drops sharply to preserve acidity.
  • Torrontes (a native Argentinian white, a natural cross between Criolla line and Alexandria Muscatt) is the most classic here: aromatic, high in acidity but not greasy (general knowledge).
