- The low latitude (26 degrees south) is offset by the high altitude: the sunshine is extremely strong → the peel is thick and the color is dark; the night temperature drops sharply to preserve acidity.
- Torrontes (a native Argentinian white, a natural cross between Criolla line and Alexandria Muscatt) is the most classic here: aromatic, high in acidity but not greasy (general knowledge).
